Cinnamomum cassis Once used in love potions and to perfume wealthy Romans, this very ancient spice comes from the bark of a tree that thrives in Sri Lanka (formerly known as Ceylon, a name still used to identify true cinnamon). However, this variety comes from Vietnam. It is tingly on the tongue like the cinnamon flavor in the candy Red Hots. This variety has a higher oil content than regular cinnamon. It is very sweet and flavorful. While used mostly in sweets, it adds intrigue to savory dishes and meats.
