For traditional blackening, get a cast-iron skillet screaming hot, coat your protein in melted butter, then generously season it. Sear until a dark, flavorful crust forms, flip, add a little more butter, and finish cooking. Fair warning: this method makes a LOT of smoke, so good ventilation—or cooking outdoors—is your friend.
Ingredients: Paprika, Garlic, Cayenne, Thyme, White Pepper, Black Pepper, Oregano, Basil, Chives.
Quick Blackened Chicken
Coat 1 lb chicken breasts with 1 Tbsp melted butter and 1–2 Tbsp Cajun Blackening Seasoning. Sear in a very hot cast-iron skillet until a dark crust forms, flip, and cook until the chicken reaches 165°F.
Blackened Shrimp
Toss 1 lb peeled shrimp with 1 Tbsp melted butter and 1 Tbsp Cajun Blackening Seasoning. Cook in a hot cast-iron skillet for about 1–2 minutes per side, just until the shrimp are cooked through.
Big Cajun flavor. Zero added salt. Plenty of attitude.
