My cousin Pogo—of Cousin Pogo’s Award Winnin’ Butt Rub fame—introduced me to an Oklahoma-style hog and poultry seasoning years ago. After the original recipe changed hands and started including ingredients I didn’t care for, I decided to create my own interpretation. The result is Okie Dokie!
Sweet and savory with a salty, slightly smoky background, Okie Dokie is especially delicious on pork and chicken. Use it for ribs, pulled pork, baked chicken, wings, smoked meats, or even a steak. A light sprinkle also works well on fish.
It also makes an excellent starting point for homemade barbecue sauce. Simply mix it with ketchup or tomato paste and adjust the sweetness and tanginess to your taste.
Ingredients: Sea Salt, Brown Sugar, Sugar, Garlic, Onion, Paprika, Chili Pepper, Bell Pepper, Celery, Black Pepper, Thyme.
Okie Dokie Chicken Wings
Toss 2 pounds of chicken wings with 1 tablespoon oil and 2 tablespoons Okie Dokie. Bake at 425°F for 40–45 minutes, turning halfway through, until browned, crisp, and cooked through.
Quick Okie Dokie Barbecue Sauce
Combine 1 cup ketchup, 1–2 tablespoons Okie Dokie, 1 tablespoon apple cider vinegar, and 1 tablespoon brown sugar. Simmer for 10 minutes, then use it for brushing, dipping, or finishing smoked meats.
