After aging lavender and sugar together for a while, part of the mixture is sifted to separate the lavender flower heads from the cane sugar. The flower heads that have been sifted are poured into a food processor and blended with confectioner's sugar. This gives the confectioner's sugar a very strong lavender flavor and a slight smurfy (purple) color. This sugar can be used anywhere you would use confectioner's sugar.
