Parsley

A little green goes with everything! Dried parsley brings mild, herbaceous flavor and a touch of color to your favorite dishes.

Uses

Stir into soups, sauces, dressings, rice, and pasta. Sprinkle over eggs, potatoes, or roasted vegetables, or mix into garlic butter and seasoned breadcrumbs. Give it a few minutes to soften when adding to dips or dressings.

In ancient times, parsley wreaths were said to ward off drunkenness. Their success at that task is questionable, but we do love parsley for its other qualities! Curly and flat-leaf are the best-known varieties, with Italian parsley prized for its richer taste.

Two Quick Recipes

Parsley Garlic Butter
Mix ½ cup softened butter with 1 tablespoon dried parsley, ½ teaspoon garlic powder, and salt to taste. Let stand for 15 minutes before spreading on warm bread or melting over vegetables.

Lemon Parsley Pasta
Cook 8 ounces pasta, reserving ¼ cup of the cooking water before draining. Toss the hot pasta with 2 tablespoons olive oil, 1 tablespoon dried parsley, 1 tablespoon lemon juice, and ¼ teaspoon garlic powder. Add a little reserved water and stir over low heat for 1–2 minutes. Season with salt and pepper, and finish with Parmesan if desired.
