Originally a process used by the Aztecs, the act of salting and then drying tomatoes was used to preserve the fruit. What they didn't know at the time was that this process also maintains the nutritional value of the tomato. As a preserved fruit this was especially helpful because then tomatoes could be added to meals year round all with the added vitamin C benefit. Italians originally dried their tomatoes on the ceramic roof tops during the summer. These preserved summer-ripe flavors have the wonderful tangy-sweet flavors of fresh tomatoes, without the need for canning. This is the powder version of this product.
