Agar is a seaweed derivative that is used in the same manner as gelatin. For vegetarians it is the perfect sucstitute for recipes that call for animal based gelatin. Two teaspoons of agar will thicken 2 cups of liquid. In the same manner as gelatin, agar is flavorless, becoming gelatinous when dissolved in water, heated, and then cooled.
