A little pine, a little citrus, and plenty of personality! Juniper berries bring a bold, woodsy flavor to hearty dishes—and if you’ve ever enjoyed gin, you’ve already met their signature taste.
Lightly crush the berries to release their flavor, then add them to stews, sauces, stuffings, or meat brines. They’re especially good with pork, poultry, and game, where their aromatic bite balances rich flavors. Around our German-influenced corner of the country, they’re also a favorite for giving sauerkraut a little extra character. Start with a few—a little juniper goes a long way!
Ingredients: Juniper berries (Juniperus communis).
Quick Juniper Sauerkraut: Combine 2 cups drained sauerkraut, 4 lightly crushed juniper berries, ¼ cup broth, and a tablespoon of butter in a saucepan. Cover and simmer gently for 20–30 minutes. Serve alongside bratwurst or roast pork.
Juniper-Roasted Potatoes: Toss 1 pound halved baby potatoes with 1 tablespoon olive oil, 4 finely crushed juniper berries, ½ teaspoon garlic powder, and salt and pepper to taste. Roast at 425°F for 30–40 minutes, turning halfway through, until golden and tender.
