Capsicum annuum Back in 1907, Fabian Garcia was a horticulturist at the New Mexico College of Agriculture and Mechanic Arts, now New Mexico State University. He is known for developing a near perfect pod through interbreeding several different pods from the surrounding valleys. Today these peppers are known as New Mexico Chilis. They have a spicy and delicious flavor and aroma. These are the peppers that are usually preferred by gourmet cooks.
