Tandoori Spice Rub
Tandoori chicken is a classic Indian dish traditionally cooked at very high heat in a clay oven called a tandoor. Luckily, you do not need a clay oven to enjoy those bold, warm spices at home.
Use this blend as a dry rub on chicken, pork, fish, or vegetables before baking or grilling for a spicier finish. For a more traditional preparation, mix it with thick Greek yogurt and coat the meat before cooking. The yogurt tenderizes the meat, mellows the heat, and helps create that rich tandoori flavor.
No Greek yogurt? Strain plain yogurt through several layers of cheesecloth in the refrigerator overnight until it becomes thick and creamy.
Easy Tandoori Chicken
Mix 2 tablespoons Tandoori Spice Rub with 1 cup Greek yogurt. Coat 2 pounds of chicken and refrigerate for at least 2 hours. Bake at 425°F for 30–40 minutes, or until fully cooked.
Tandoori Roasted Cauliflower
Toss 1 head of cauliflower florets with 2 tablespoons Olive Oil and 1 tablespoon Tandoori Spice Rub. Roast at 425°F for 25–30 minutes, stirring halfway through.
