Yes, Cousin Pogo is real—and yes, he actually won an award using this rub. So while the name may get a laugh, the seasoning means business. It has the smoky-sweet backbone you want in a great BBQ rub, but with a more herbaceous kick from sage, rosemary, thyme, cilantro, and oregano.
Rub it generously on pork butt or ribs before a long smoke, or take it beyond BBQ and try it on steaks, chops, chicken, or grilled vegetables. And then there’s the secret weapon: coffee. Yes, coffee!!! It adds a deep roasted richness that works especially well with smoked and grilled meats.

Cousin Pogo’s Smoked Pork Butt
Coat a 4–5 lb pork butt generously with ¼–⅓ cup Cousin Pogo’s Butt Rub. Smoke at 250°F until tender and the internal temperature reaches about 200–205°F. Rest before pulling.

Lightly oil 2 steaks and season generously with 1–2 Tbsp Cousin Pogo’s Butt Rub. Let sit for 20–30 minutes, then grill to your preferred doneness.
