Ethiopian-Spiced Chicken
Toss 1 pound of chicken with 1 tablespoon of olive oil and 1–2 tablespoons of seasoning. Roast at 400°F for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F.
Spiced Red Lentils
Sauté ½ diced onion in 1 tablespoon of oil until softened. Stir in 1 tablespoon of seasoning, 1 cup of red lentils, and 3 cups of broth. Simmer for 20–25 minutes, stirring occasionally, until thick and tender.
