Fenugreek Red Lentils
Warm 1 tablespoon oil in a saucepan. Add ¼ teaspoon fenugreek seeds and stir briefly until fragrant, without letting them darken. Add 1 cup rinsed red lentils, 3 cups water, ½ teaspoon turmeric, and ½ teaspoon cumin. Simmer for 20–25 minutes until soft, adding water as needed. Finish with salt and lemon juice to taste.

Savory Fenugreek Potatoes
Heat 1 tablespoon olive oil in a skillet. Add ¼ teaspoon fenugreek seeds and stir briefly until fragrant, without letting them darken. Add 1 pound small cubed potatoes, ½ teaspoon cumin, ½ teaspoon paprika, salt to taste, and ½ cup water. Cover and simmer for 15–20 minutes, stirring occasionally and adding water as needed, until tender. Uncover to cook off excess liquid, then finish with a squeeze of lemon.
