Decorticated Cardamom
All the fragrant flavor, with the shell work already done! Decorticated cardamom is simply cardamom seeds with the outer pods removed. These tiny seeds pack a bold, aromatic flavor with floral notes and hints of citrus and ginger.
Use them in curries, rice dishes, chai, coffee, and Scandinavian-style baked goods. Grind as needed, or lightly toast in a dry skillet until fragrant before grinding. Start with a small amount—a little goes a long way!
Ingredients: Cardamom seeds.
Quick Recipe: Cardamom Cinnamon Sugar
Combine ¼ cup sugar, ½ teaspoon cinnamon, and ¼ teaspoon freshly ground cardamom. Sprinkle over buttered toast, oatmeal, or warm muffins.
Quick Recipe: Cardamom Rice
Melt 1 tablespoon butter in a saucepan. Stir in 1 cup basmati rice and ¼ teaspoon freshly ground cardamom. Add water according to the rice package directions and a pinch of salt. Cook as directed, then fluff and serve.
