Vegan-Nati Chili

Cincinnati Style Chili Seasoning:  Ancho Chili, Sea Salt, Cocoa, Garlic, Coriander, Cayenne 40, Cumin, Cinnamon, Allspice, Worcestershire Powder, Cloves, Bay Leaf.



  • 2 TBSP Cincinnati Style Chili Seasoning
  • 2 LBS Mushrooms, Button or Crimini
  • 6 Ounces Tomato Sauce
  • 2 Cups Tomato Juice or Water
  • 1 Onion, Diced
  • 1 Cup Quinoa
  • 1 Quart Vegetable Broth

Follow these steps:

  1. Grind mushrooms in a food processor until the consistency of ground beef.
  2. Cook quinoa, drain & toast in a 500° oven until crispy, do not burn.
  3. Sauté onions in vegetable oil over medium heat.
  4. Add mushrooms, quinoa, tomato sauce, broth & juice or water.
  5. Bring to a boil.
  6. Season with Cincinnati Style Chili Seasoning. Mix well.
  7. Turn heat to low & simmer 2-3 hours.
  8. Top each bowl with cheese & crackers.
