Vegan-Nati Chili
Cincinnati Style Chili Seasoning: Ancho Chili, Sea Salt, Cocoa, Garlic, Coriander, Cayenne 40, Cumin, Cinnamon, Allspice, Worcestershire Powder, Cloves, Bay Leaf.
Ingredients:
- 2 TBSP Cincinnati Style Chili Seasoning
- 2 LBS Mushrooms, Button or Crimini
- 6 Ounces Tomato Sauce
- 2 Cups Tomato Juice or Water
- 1 Onion, Diced
- 1 Cup Quinoa
- 1 Quart Vegetable Broth
Follow these steps:
- Grind mushrooms in a food processor until the consistency of ground beef.
- Cook quinoa, drain & toast in a 500° oven until crispy, do not burn.
- Sauté onions in vegetable oil over medium heat.
- Add mushrooms, quinoa, tomato sauce, broth & juice or water.
- Bring to a boil.
- Season with Cincinnati Style Chili Seasoning. Mix well.
- Turn heat to low & simmer 2-3 hours.
- Top each bowl with cheese & crackers.
