In the days before large supermarkets, we used pickling as one of the ways we preserved our food for the winter. This is a wonderful full bodied pickling spice that uses many flavors from the Old World. It is made using: allspice, bay, cardamom, cinnamon, cloves, coriander, ginger, mustard, and black peppercorns.
