Vadouvan style curry has its origins in the former French colony of Pondicherry in southern India. It is traditionally made by drying large amounts of fresh shallots, onions and garlic and then mixing these with typical curry spices. We do all that work for you blending those items with cumin, fenugreek, cardamom, brown mustard, turmeric, nutmeg, chilis and cloves. It is delicious when cooked with lentils and the mellow nature of the curry pairs well with cream sauces or delicate ingredients such as eggplant.
