After aging lavender and sugar together for a while, part of the mixture is sifted to separate the lavender flower heads from the cane sugar. The flower heads that have been sifted are poured into a food processor and blended with confectioner's sugar. The cane sugar that remains has a light lavender smell and taste. This sugar can be used anywhere you would use cane sugar, but is typically used to flavor teas, coffee, and other drinks.
